Tuesday's Cupboard—Beets!

A fresh, healthy, and convenient addition to your springtime salads!

Since I'm a week behind in my blog posts, I'm going to throw out some ideas that are fast and fun.  Let's talk about yummy and delicious baby beets!

I understand that not everybody likes beets, but they've come a long way from the traditional matchstick variety in the canned food section of your grocery store.  I still like them julienned straight out of the can, but did you know that you can buy peeled and steamed packaged beets in the produce department at Safeway?


It's a pretty cool idea!  You get about 6 golfball-sized, whole beets in an 8-oz. vacuum-sealed package, and they will keep in the fridge for 4 months.  With that amount of refrigerator life, you don't have to worry about spoilage.

The only drawback is that they are a little messy to remove from the vacuum packaging, but if you hold them down into the sink and cut the packaging with scissors, you'll avoid spraying yourself and the countertop with beet juice.

I like them cut in half on top of a tossed salad.  Zero fat and zero cholesterol! And, beets are one of the cancer-fighting foods, specifically colon cancer.  I'll talk some more about the rainbow varieties of fresh beets that I've seen at Whole Foods and at the farmer's market, but for now, I'll leave you with my tasty salad!
