Tuesday's Cupboard—Tomato-Mozzarella Toast

A fast & delicious way to use fresh toms & garden veggies


I grabbed this recipe off of Pinterest!  Try it on thick-sliced multi-grain artisan toast with your favorite cheese.  Smoked gouda, dill havarti, or maybe a couple slices of Sargento chipotle cheddar cheese (available at Safeway)?

Serve with a salad of fresh greens and a big glass of cranberry-orange iced tea.  Cranberry-orange iced tea is a house specialty at the Boulder City Hotel restaurant.  It comes in a quart-size canning jar for thirsty BC visitors.  Not too sweet with dried cranberries and a hunk of fresh orange on the rim.  Be sure to try one if you haven't already.
