Tuesday's Cupboard—Orecchiette con Broccoli


How broccoli led to true love...


I saw this pin on Pinterest and went to the blog to check out the recipe.  I'm glad I did because there is a lovely, romantic story behind it.

Orecchiette con Broccoli:  The Way to A Man's Heart

The ingredients are simple:

•  fresh broccoli, chopped
•  1 to 2 cloves fresh garlic, squashed in the skin or peeled & chopped
•  1/2 fresh lemon
•  orecchiette pasta (little saucer-shaped pasta)
•  grated Pecorino cheese
•  EVOO (extra-virgin olive oil)
•  kosher salt & freshly ground black pepper

Sauté chopped broccoli in a swirl of olive oil with a clove or two of chopped garlic & a pinch of dried chilies.  Sauté just until the broccoli is bright green & slightly crunchy, about 5 minutes.  Season with kosher salt to taste.  Add a squeeze of fresh lemon to enhance flavors.  Stir & set aside.  

Cook the pasta in a pot of boiling water.  Drain, then return the pasta to the empty cooking pot.

Add the sautéed broccoli.  Stir to combine.

Serve immediately with a handful of grated Pecorino cheese, a drizzle of olive oil & some freshly ground black pepper.

A bottle of chilled Italian white wine and perhaps a single candle...
