Tuesday's Cupboard—Slow Cooker Chicken Cacciatore

A hearty & easy dish for an Autumn supper

Serve over rice or pasta

Adapted from the original recipe in WW Slow Good cookbook © 2005 (page 156).

Slow Cooker Chicken Cacciatore

Serve this classic Italian stew over rice, whole wheat spaghetti, or whole wheat penne pasta.  To spice it up, add a couple of dashes of dried pepper flakes at the beginning.



  • Sprinkle chicken with salt & pepper; heat the oil in a large nonstick skillet over med-high heat.  Add the chicken & cook until browned, about 2 minutes.

  • Transfer the chicken to the slow cooker & add remaining ingredients (bell pepper, sweet onion, garlic, white mushrooms, canned tomatoes, sugar, salt & pepper).
  • Cover slow cooker; cook on high heat for 4 hours or on low heat for 6 to 8 hours. Taste just before serving and season to taste with salt & pepper. Yields about 1-1/2 cups per serving.

Brown the chicken
For convenience, use pre-sliced white mushrooms

Chop fresh bell peppers & sweet onion
Use Italian-style canned tomatoes
Slow cook on high for 4 to 5 hours
