If whatever is out there doesn't kill ya, this stuff will.  

The traditional recipe has 192 % of your daily allowance of saturated fat.  But, it's a 5-star comfort food based on every review I've ever read.  Let's see if we can lighten it up!

My Version:  Saner Funeral Potato Casserole

  • 2 lbs. (32-oz.) Ore-Ida Southern-style frozen cubed potatoes
  • 1 10-3/4 oz. can Campbell's Healthy Request Cream of Chicken Soup
  • 2 cups reduced-fat grated cheese (Monterey Jack, sharp cheddar, any cheese with a kick of flavor)
  • 1 pint nonfat or light sour cream
  • 1/2 c. chopped sweet onion (Vidalia or Walla Walla)
  • 1 small red + 1 small yellow fresh bell peppers, chopped (any red/green/yellow combo works)
  • 1 teaspoon kosher salt or salt to taste
  • 1/2 teaspoon cracked black pepper
  • 2 c. crumbled corn flakes
  • 1/4 c. butter, melted
  • Sprinkle of paprika + cracked black pepper on top

Make It!

Preheat oven to 350° F.  Spray a large square or rectangular casserole dish with butter-flavored PAM.    

Combine corn flakes & melted butter in a small bowl.  Combine all other ingredients in a large mixing bowl.  Press into casserole dish; top with buttered cornflakes.  Spray top lightly with butter-flavored PAM.  Dash some paprika over the top.  Grind fresh black pepper over the whole mess.  

Bake  for 1 hour + 15 minutes.  Check after 1 hour.  Remove when the cornflake topping is golden brown & crispy.
