Tuesday's Cupboard—Tandoori Roasted Cauliflower Stew

Souper time!
tandoori roasted cauliflower stew
prep 25 mins / cook 45 mins / serves 8
equipment:  Silpat or parchment paper; immersion blender

ingredients 8 cups cauliflower cut-up & divided in half2 T. curry powder1 tsp. kosher salt, divided (1/2 tsp each)olive oil PAM1 T. coconut oil2 c. red or yellow onion, chopped1 tsp. chopped garlic (jarred, packed in water or 1 clove, fresh)1 tsp. minced ginger (jarred or fresh)1 tsp. mustard seed1 tsp. cumin seed8 cups chicken broth2 (14 oz.) can diced tomatoes2 cups fresh green beans, cleaned & cut into 2-inch segments1 T. lime juice (preferably fresh)paprika for sprinkling on topchopped fresh basil (optional for sprinkling on top)
make it! Preheat oven to 450°F.  Line a baking sheet with parchment paper or a SILPAT.  Spray lightly with olive oil PAM.Place 4 cups of the chopped cauliflower in a large bowl & coat with olive oil PAM.Toss with 2 tsp. curry powder & 1/2 tsp. kosher salt…

This reduced personal expenses and made it easy to move personnel when needed.

3.  She reassigned nuns to different beds & changed the function of rooms within the convents.

This practice encouraged flexibility and adaptability and provided a pool of workers who were prepared to change roles, as needed.

Tuesday's Cupboard—Moroccan Spiced Butternut Squash Bisque

My adjustments:

doubled the broth to 8 cups to make a thinner soupdoubled the shredded carrots (2-10 oz. bags)doubled the orange juice used heaping measures of the spices


Moroccan Spiced Butternut Squash Bisque
prep: 25 mins // cook 35 mins // serves 8 special equipment:  an immersion blender

Ingredients 1 tsp. coconut oil1 large chopped sweet yellow onion (2 c.)2 - 10 oz. bags of shredded carrots1 tsp. kosher salt1 T. jarred minced ginger (or 1 T. fresh)1 tsp. jarred chopped garlic in H20 (or 2 cloves, fresh)1 T. coriander2 tsp. cumin1 tsp cinnamon2 pinches of cayenne2 - 20 oz. packages of precut butternut squash8 cups chicken broth (I use Knorr's double-size cubes to make my own) 2 T. orange juice1 small package pre-cleaned chives
